The type of heating system primarily determines how your machine handles brewing coffee, frothing milk, and temperature. And thus, how the machine feels in daily use.

None of the three is automatically better. The main question is: how do you make coffee, and how much control do you want?

What is a single boiler espresso machine?

A single boiler machine uses one boiler for both espresso and steam. The boiler needs to operate at a different temperature for both tasks, and that has an effect.

For espresso, water around 90-95 °C is needed, while for steam, you need a much higher temperature. If you want to froth milk after your espresso, the machine must switch to a higher temperature. If you then want another espresso? You'll have to wait until the temperature has dropped again.

That means: first make espresso, then steam. So, a little waiting time.

For those who mainly drink espresso and only occasionally make a cappuccino, this doesn't have to be a problem at all. A single boiler can actually be pleasant and easy, and gives you a lot of control for espresso.

What is an HX espresso machine?

HX stands for Heat Exchanger.

An HX machine has one large steam boiler. Inside that boiler is a separate tube through which fresh water for your espresso flows. The water for your espresso is thus heated without having to bring the entire boiler to a different temperature for each espresso. This allows you to brew espresso and froth milk simultaneously.

An HX has a different character than a dual boiler. You work with one large steam boiler and a heat exchanger for the brew water. As a result, temperature management sometimes requires a bit more attention. The temperature of your espressos can vary.

What is a dual boiler?

With a dual boiler, the machine has two separate boilers: one for espresso and one for steam.

This system is popular because each boiler has its own function, giving you the best results for both espresso and steam.

The coffee boiler can maintain the correct brewing temperature while the steam boiler is at a much higher temperature. This allows you to brew espresso and froth milk simultaneously, and the machine has great control over both processes.

Even when using different types of coffee, a dual boiler can be interesting. A light roast, for example, may require a different brewing temperature than a dark roast. A separate coffee boiler allows for more precise adjustments.

But what do you really notice about your boiler?

The difference is mainly in your workflow.

But if you make four cappuccinos in a row? That's a different story. With a single boiler, you're switching between brewing and steaming temperatures. With an HX or dual boiler, brewing coffee and steaming can happen much more easily side-by-side.

And then there's temperature control.

Do you want to treat every coffee bean differently and enjoy experimenting with brewing temperature? Then a dual boiler becomes more interesting. If you mainly want a good espresso without endlessly fiddling with settings? Then you might not need that extra boiler at all.

More technology doesn't automatically mean better coffee. It mainly means more possibilities and a greater chance of stable temperature.


And what do Ascaso and Kafmasino do?

Not every modern espresso machine has a traditional dual boiler.

Ascaso, for example, deliberately chooses thermoblock technology. The Steel DUO PID and Steel DUO PLUS have two separate thermoblocks: one for coffee and one for steam. This allows them to heat up quickly and simultaneously brew coffee and steam.

Kafmasino KUBO does it differently. It has a coffee boiler with a separate steam thermoblock. This way, Kafmasino combines a stable coffee boiler with instant steam and a lot of control over pressure, flow, and temperature.

And that's what we find interesting: there isn't just one good way to build an espresso machine. There are different approaches to how you get to the coffee you like to drink.

Do you mainly drink espresso? Then a single boiler can be wonderfully simple.

Do you make cappuccinos for the whole family every morning? Then it's nice not to have to wait.

And are you someone who wants to brew three different beans side-by-side on a Sunday afternoon to see what happens at 92, 94, and 96 °C? Then extra temperature control suddenly becomes a lot more fun.

In other words: buy the technology you will actually use.
